Super Food Salad

Makes 2 servings

1 cup shredded kale

1 cup shredded cabbage

¼ cup thinly sliced celery

¼ cup thinly sliced radish

½ cup thinly sliced green apple

¼ cup cubed fresh pineapple

1 tablespoon thinly sliced green Jalapeno chili

1 cup sliced grilled chicken breasts

2 tablespoons roasted sliced almonds

1 tablespoon sunflower seeds

4 tablespoons dried blueberries

½ cup citrus dressing

1 tablespoon sesame seeds

 

Citrus dressing

Makes ½ cup

½ teaspoon salt

1 clove garlic, minced

1 red chilies, minced

1/3 cup apple juice concentrated

3 tablespoons lime juice

2 tablespoons blood orange

Add the salt, garlic and chilies in a mortar and puree. Add the remaining ingredients. Stir to mix. Transfer to a bowl and set aside. If not using immediately, refrigerate. Check for balance of sweet and sour taste before using. The citrus might lose their strength.

For the salad:

  1. Mix all the ingredients except for the sesame seeds together in a large mixing bowl.
  2. Transfer to a serving platter and garnish with sesame seeds
